Tasting Note :
We find small white wallflowers, sweet briar, hawthorn with a touch of pollen. The texture has fullness of fruits, then tightening with a saline tension – thirst quenching.
Winemaking :
100% Barrel fermentation (10% new oak barrels / 90% barrels aged 1 and up to 5 years). Maturing on fine lees for 8 months in barrel and 4 months in tank.
